OK, so it's been a while and I have a whole bunch of entries backed up. I thought I'd get things going again with a recipe. This recipe comes courtesy of a feast at Judy Bastyra's. I was helping her cook up and we dreamt up this pie (well Judes did really). Anyway, it's a cracker, although the picture could be better....
6 small leeks (or fewer big ones)
1 fresh chilli
small bunch of tarragon, washed and finely chopped
large bunch of flat-leaf parsley, washed and finely chopped
medium bunch of chives, washed and finely chopped
double cream
1kg ish mixed fish (whatever you fancy, they do fish pie mixes which are quite good... not sure on the quantity here... a couple of packets...)
1.5 glasses white wine
300g ish mushrooms (I just used one pack)
pre-rolled puff pastry (or make your own if you know how... I don't!)
Slice and wash leeks and the chilli, then sweat them in a pan with a good knob of butter. Then when the leeks are about half-cooked add the chopped mushrooms. Once the leeks are cooked add the white wine and let the alcohol boil off. Then add the fish, when the fish is half cooked add the chives, parsley and tarragon. Cook for a bit and then season to taste. Finally add a slug of cream and let it cook for a few more minutes. Then put the mixture in a greased pie-dish (or whatever) and cover with a sheet of puff-pastry. Brush the pastry with egg and add some holes. Then put pie in the oven (at about 220C or 200 in fan assisted) until the pastry looks good. Pie Bob is your uncle!
