Back at it....

OK, so it's been a while and I have a whole bunch of entries backed up. I thought I'd get things going again with a recipe. This recipe comes courtesy of a feast at Judy Bastyra's. I was helping her cook up and we dreamt up this pie (well Judes did really). Anyway, it's a cracker, although the picture could be better....

6 small leeks (or fewer big ones)
1 fresh chilli
small bunch of tarragon, washed and finely chopped
large bunch of flat-leaf parsley, washed and finely chopped
medium bunch of chives, washed and finely chopped
double cream
1kg ish mixed fish (whatever you fancy, they do fish pie mixes which are quite good... not sure on the quantity here... a couple of packets...)
1.5 glasses white wine
300g ish mushrooms (I just used one pack)
pre-rolled puff pastry (or make your own if you know how... I don't!)

Slice and wash leeks and the chilli, then sweat them in a pan with a good knob of butter. Then when the leeks are about half-cooked add the chopped mushrooms. Once the leeks are cooked add the white wine and let the alcohol boil off. Then add the fish, when the fish is half cooked add the chives, parsley and tarragon. Cook for a bit and then season to taste. Finally add a slug of cream and let it cook for a few more minutes. Then put the mixture in a greased pie-dish (or whatever) and cover with a sheet of puff-pastry. Brush the pastry with egg and add some holes. Then put pie in the oven (at about 220C or 200 in fan assisted) until the pastry looks good. Pie Bob is your uncle!

Pie Bob's

On a recent visit to Arbroath I checked out Pie Bob's. A nice wee bakers with a cafe as well. The mince bridie was order of the day and was a good'un, altho would have been better if it'd been warmed in the oven not the microwave. No knocking the pie though.

Here she is... Oh and we got a coupla macaroni pies but they didn't last long enough for photos... Anyway, the macaroni pie deserves a post all of it's own.....

Greggs to go posh?

So, the high street pie shop Gregg's is apparently going to attempt to go posh. Skinny moccafrappacino with your cheese n onion bake? See here.

Personally I think of them like the Ikea of pies... It's not great, but there's nothing wrong with em and like a budgie they're cheap cheap cheap.... Hmmm chicken bake.......

Cracking pie

This is a cracking pie. It is a steak pie bought from Dunkeld Butchers, although I think they source them from Irvine's in Blairgowrie. Good big pieces of prime steak in a rich gravy all wrapped up some light pastry. If all the pies in the world were as good as this I dare say they'd be a lot less wailing, although of course there would still be much gnashing of teeth..... hmm mmm mmmmmmm

Pie Heaven

“When you die, if you get a choice between going to regular heaven or pie heaven, choose pie heaven. It might be a trick, but if it's not, mmmmmmmm, boy.” (Jack Handy)
